This soup is brilliant for lunches and is amazingly quick to make with frozen peas and beans, left over roasted ham, ham stock and a splash of milk! Serve with crutons and a poached egg…YUM!!
How to do it: Soften some spring onions (scallions) in some buter & olive oil. Add frozen peas and french beans and cook over a low heat with the lid on until everything is soft and bright green in colour. Add a handful of left over chopped roast ham (or good quality shop bought) and add enough ham stock to just cover everything. Bring to the boil and cook for 10 minutes. Remove from the heat and let the soup cool slightly before adding a splash of milk and blitzing with a hand blender until smooth.
Poach an egg if you fancy a protein boost & serve with some toast or crutons made from granary bread.
