Pancake Day! Hurah! In my house this used to mean stacks of yummy fresh pancakes with Nutella, lemon juice, sugar, fruit, syrup...basically anything sweet.
No so this year. Since I started my sans-sugar initiative last week - so hard by the way - I have had to do a little rooting around in cyber-space for some sugar free alternatives to traditional pancake fillings. And it wasn't an easy task. So many so -called 'sugar-free' recipes posted were laced with honey, fruit and syrup - all big no-nos at the moment in my quest for a fructose free life!.
Here's my pick:
1. PUMPKIN SPICED CREPES WITH PUMPKIN BUTTER - YUMMLY Use full-fat milk instead of skimmed & ditched the optional powdered sugar!
2. SCOTCH PANCAKES WITH SMOKED SALMON & HORSERADISH SAUCE - BBC FOOD
Decadently OTT? I think so but also high in healthy Omega-3.. This dish would also be amazing on Christmas morning, birthdays or any time you want to give a special person a real treat!
3. PEANUT BUTTER 'CAKE' COCONUT FLOUR PANCAKES - DASHING DISH
for when you want something sweet but don't want the sugar! Always!
4. BREAKFAST CREPES WITH EGGS,BACON & CHEESE - THE AMATEUR GOURMET
- packed full of protein so fantastic for after workouts to replenish tired muscles and promote tissue repair.
5. COURGETTE PANCAKES WITH FETA & RED PEPPER FILLING - ALL RECIPES
full of veggie goodness with a hit of protein thanks to beautiful Feta.
