If, like me you are trying to cut out, or cut down on, sugar (read blog post here) these scones are amazing for when you fancy a little comfort food.
GATHER TOGETHER:
4oz Self Raising Flour
2oz Butter* (in small chunks)
As much full fat milk* as it takes to make a soft dough
A pinch of salt (if you like)
*Many people use margarine and skimmed milk instead but I would really urge you not to! Butter and full-fat milk, not only taste better but, are whole, natural foods and are a fantastic source of fat soluable vitamins A & D. Conversly, margarine is a combination of hydrogenated vegetable oils (trans fats), water, emulsifyers, salt, preservatives and the rather dubious ingredient 'flavourings'. I know which I'd prefer to eat.
THEN:
Preheat the oven to about 220 Celsius and pop your baking tray in for a few minutes to warm it gently through. Grease it with a small amount of butter and keep warm // Rub the butter into the flour with your finger tips until it looks like breadcrumbs. You can add a wee pinch of salt here if you like before adding the milk to make a soft dough // Roll the dough out into a floured surface to about just over an inch thick and cut out before place into the greased baking tray // Bake right away (don't leave them sitting about) for about 8-10 minutes // Once out of the oven, if you aren't going to eat then right away, place a clean tea towel over the top of the tray and leave them to cool.

Voila! Sugar free scones!
Top Tip! For light scones, try not to handle the dough too much and definitely don't knead it: it's not bread! xxx
